After months of cold, dark and damp days, you just need a little ‘pick-me-up’! These days I’ve been craving spring time; the smells, the fresh air and beautiful flowers. It might just be me, but the aromatic, tart sweetness of lemons remind me of sunny spring days. So what better to sneak in some lemony goodness then in a bite sized, delicious, raw coconut macaroon! These macaroons boasts not only tons of flavour, but some pretty amazing health benefits as well! They are rich in fibre, protein, omega fatty acids, iron, calcium and vitamin C. Try having a couple of these guys 20-30 before a workout to maximize your energy!
Recipe: Makes approx. 20 bite sized macaroons
2/3 cup raw, unsalted cashews
1 1/2 cup raw shredded unsweetened coconut
8 medjool dates, pitted
juice of 1 lemon
zest of 1 lemon
2/3 hemp hearts
1 tbps bee pollen
pinch of sea salt
Place all ingredients in food processor and mix only until all ingredients are roughly chopped but not too long that mixture is completely pureed. Spoon out mixture and roll into bite sized balls. Place macaroons in fridge for approx. 1 hour to set. Enjoy 🙂
If you like a strong lemon flavour, add more lemon zest to recipe.
